Step by Step
Brewing Black Tea
1
Boil fresh water
Use freshly drawn cold water and bring to a full, rolling boil. Avoid boiling it again, as that depletes oxygen and flattens the flavour.
2
Warm the pot or cup
Pour a splash of hot water into your teapot or mug, swirl, and discard. This prevents the tea from cooling too quickly on contact.
3
Measure your tea
Add 1 heaped teaspoon of loose leaf per 200ml of water, or one per person plus one for the pot if using a teapot.
4
Pour and steep
Pour the boiling water directly over the leaves. Steep for 3 minutes for a lighter cup, up to 5 minutes for a bolder, stronger brew.
5
Strain and enjoy
Pour through a strainer into your cup. Add milk, honey, or lemon to taste, or drink as it is to appreciate the full flavour.
Kai's Tips
✦Add more time, not temperature, for a stronger brew.
✦Quality black teas like Darjeeling deserve to be tasted plain first.
✦Try a second steep for 2 to 3 minutes with the same leaves.
